Low Carb Berry Galette

This Berry Galette is amazing! It’s not overly sweet – it pairs perfectly with a cup of tea. My husband said ‘this I can eat everyday!’ Well, I’ll take that as a good thing. It really is delicious. This is another dessert that no one will ever know is low carb, gluten and sugar free – it’s great!

Ingredients for the Berry Galette

Low Carb Dough

  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 8 strawberries, sliced
  • 2 tbsp Pyure
  • 1 egg whisked (for egg wash)

Instructions 

1. Separate the dough into two equal parts.

2. Take one dough and place it between two pieces of plastic wrap. Press the dough down with your hand to make a disc. Using a rolling pin roll out a 12 inch (in diameter) circle. When you roll it out the edges are going to crack, using the side of your hand push the edges in to form a circle.

2. Remove the top plastic wrap and flip the dough onto a large baking sheet lined with parchment paper.

3. In a medium size bowl mix half of the berries (1/2 cup raspberries, 1/2 cup blueberries, 1/2 blackberries and 4 sliced strawberries) sprinkle 1 tbsp of sweetener (or adjust to your liking), mixing very gently not to crush the berries.

4. Using a large spoon, gently spoon the berries into the center of the dough (make sure your dough is on the baking sheet because you will not be able to move it once the Galette is formed). Spread the berries out as evenly as possible but leave a 2 inch space around the edges. 

5. Using a sharp knife (pairing knife works well) cut slits in the dough, starting from the berries to the edge. Then VERY gently start holding the dough over the berries going in the same direction. Brush the edges of the dough with the egg wash.

6. Repeat the steps with the second dough.*** Bake at 375 for 15-20 minutes. Mine took 17 minutes.
