Like Real Bagels

Everyone seems to want this recipe and for good reason – it’s amazing. I didn’t want to post it just yet because I don’t like how the photos turned out but with so many requests – here it is. Bare with the photos please, next time I make the bagels I will reshoot them. This recipe is truly amazing, for the bagels I do make one small small change from the original dough recipe but even if you don’t make this change the bagels will still be delicious.

Ingredients for the dough

  • 3/4 cups almond flour
  • 1/2 cup baking blend
  • 1/4 cup oat fiber   
  • 2 tbsp baking powder
  • 1/2 tsp baking soda   
  • 1 tsp apple cider vinegar    
  • 2 eggs
  • 1.5 cups mozzarella cheese   
  • 1 cup pepper jack cheese   
  • 2 oz cream cheese   
  • 1 tbsp of Everything but the Bagel Seasoning    
  • 1 egg lightly beaten (for brushing)


Instruction

1. In a small bowl combine and mix well the baking soda and the apple cider vinegar. After it stops fizzing add eggs and beat them with a whisk. Set aside. 

2. In a microwave safe bowl melt the cream cheese, pepper jack and mozzarella cheese in 30 second increments, usually takes a minute and a half to two minutes. You are looking for this consistency. 

3. In a bowl of a Kitchen Aid mixer combine all of the remaining ingredients using the hook dough. 

 3. Add the egg mixture. Turn the mixer on medium and mix just until the eggs are incorporated. Add the warm cheese mixture (if the cheese cools to much just pop it back in the microwave for 20 seconds). Mix until everything is combined and the dough is pliable. It should look like this.

4. Turn dough onto your counter and knead for a minute or so – it should come together very easily and nicely. At this point if you have a lot of loose crumbs that refuse to stick together wet your hands with water and knead again. The dough should look like this after you are done kneading. 

5. Separate the dough into 6-8 equal parts and roll each piece out into a log, 8-9 inches in length. Don’t roll out too thin – you want your bagels to have substance to them. Press the two ends together to form a circle. 

6. Brush each bagel with the egg wash and top with the Everything but the Bagel Seasoning, transfer to a large baking sheet lined with parchment paper. 

 7. Bake at 375 for 10-15 minutes or until the bagels are lightly golden. Watch them closely after 12 minutes as they can burn easily.
