Cucumber Radish Salad

This salad is delicious and perfect for those hot summer evenings when you don’t want to spend too much time in the kitchen preparing dinner. I know it’s important to pair each meal with protein but sometimes I’m all ‘protein-ed’ out and want just a simple salad. This is definitely my go to and it’s a staple in all Ukrainian homes. So lets get to it….

Ingredients for Salad

  • 1 seedless cucumber, cut in half and thinly sliced (about 3 cups)
  • 4 oz radishes, cut in half and thinly sliced (about 2 cups)
  • 1/3 cup green onion, thinly sliced

In a large bowl mix the salad ingredients, set aside.

Dressing Ingredients

  • 6 tbsp sour cream*
  • 1 large garlic clove, crushed
  • 3/4 tsp salt
  • 1/4 tsp pepper

1. In a small bowl combine the dressing ingredients, mix well.

2. Pour the dressing for the cucumbers/radishes and mix well.

The salad is ready to be enjoyed right away but I prefer mine about 10 minutes old. This allows enough time for the cucumbers and radishes to soften a bit and for the flavors to marry.

*You can substitute Greek yogurt for the sour cream (either all or half and half) this will alter the taste a bit but it will still be super delicious. If you sub all of the sour cream for the Green yogurt you will have an amazing Trim Healthy Mama Fuel Pull salad.
