Low Carb Dough

I’m always on the lookout to improving my own recipes. The other day I was getting ready to make bagels and decided to change a few things from the way I normally made them – the results were phenomenal. From the bagel recipe another amazing recipe was born (a little more about that later) but first I wanted to share the dough recipe with you all. It is such a good combination of ingredients, you can use this dough with your savory dishes or sweet. So lets get to it…..

Ingredients for the dough

  • 3/4 cups almond flour
  • 1/2 cup baking blend
  • 1/4 cup oat fiber   
  • 2 tbsp baking powder
  • 1/2 tsp baking soda   
  • 1 tsp apple cider vinegar    
  • 2 eggs
  • 2.5 cups mozzarella cheese   
  • 2 oz cream cheese

Instruction

1. In a small bowl combine and mix well the baking soda and the apple cider vinegar. After it stops fizzing add eggs and beat them with a whisk. Set aside. 

2. In a microwave safe bowl melt the cream cheese and mozzarella cheese, in 30 second increments, usually takes a minute and a half to two minutes. You are looking for this consistency. 

3. In a bowl of a Kitchen Aid mixer combine all of the remaining ingredients using the hook dough. 

 3. Add the egg mixture. Turn the mixer on medium and mix just until the eggs are incorporated. Add the warm cheese mixture (if the cheese cools to much just pop it back in the microwave for 20 seconds). Mix until everything is combined and the dough is pliable. It should look like this.

4. Turn dough onto your counter and knead for a minute or so – it should come together very easily and nicely. At this point if you have a lot of loose crumbs that refuse to stick together wet your hands with water and knead again. 

Now your dough is ready, you can make cinnamon rolls, bagels, the possibilities are really endless.
