Smoked Drumsticks

This recipe is probably the most requested recipe that I don’t have on my blog, therefore, I decided to finally share it. It’s, also, probably one of the simplest chicken recipes you will ever see, I should have called it 2-ingredient chicken drumsticks.

Over the years I have tried a lot of different seasonings, some simple and some ‘involved’ but I always find myself going back to my 3 favorite ones: Farm Dust, Montana Seasoning and the Buttery Steakhouse (I get this one at Costco). If you do not have the seasonings pictures below, use one you have on hand that’s packed with flavor and clean ingredients. How much seasoning you use is up to you.

I have found that I prefer hickory flavor (smoking wood chips) for chicken. I, also, remove the skin from all meat that I smoke. Because smoking is a slow and steady process the skin will not get crispy, instead it removing later I remove it beforehand.

If you have never smoked meat before there is one thing you need to know: smoking DOES NOT wait for you nor does it hustle if you’re on a time crunch, it runs on it’s own schedule! I would suggest either smoking your meat the day before or early enough in the day that you are not stressing closer to dinner. You’ll find that one day the same meat will take you 2 hours to smoke and another day it will take you 4 hours with you not doing anything different. I use my Masterbuilt MES 440S for smoking most of my meat.

Ingredients

  • 5-6 pounds drumsticks
  • one of the above seasonings

Instructions

1. Turn your smoker on to 275 and add a handful of wood chips to the wood chip chamber.

2. Line a large tray with plastic wrap for easy clean up later. Remove skin from the chicken using kitchen shears. Season the chicken on all sides.

3. Place the chicken drumsticks into the smoker, make sure they are not touching.

4. After 30 minutes lower the temperature to 230 and add another handful of wood chips. Add wood chips 2 more times in 45 minute increments. The chicken will be done around the 2 hour mark or when the internal temperature reads 165 degrees.
