If you have been following me for a while, I’m sure you’ve heard me say that I don’t really eat my own desserts. I can have a piece or two but otherwise I don’t overly enjoy them. I’m really not sure why. This dessert is a whole new ball game, it’s rich (that’s where the name comes from), filling and perfectly delicious.
This is a 5 layer dessert, 4 layers of flavors and the final and 5th layer is of shaved chocolate. Enough of chit-chat – lets get to the recipe.
Crust Ingredients (1st layer)
- 1/2 cup packed pecan meal (don’t over pack it)
- 3/4 cup almond flour
- 3/4 cup baking blend
- 1 TBSP Pyure
- 6 TBSP butter, melted
Instructions
1. Line a 9×13 pan with parchment paper, set a side.
2. In a medium bowl mix the first 4 ingredients together, once well combined add in the melted butter. Keep mixing until the crust ‘dough’ comes together.
3. With the back of a large spoon press the mixture in the prepared pan.
4. Bake at 350 for 15 minutes or until lightly golden. Set aside to cool.
Cream Cheese Layer Ingredients (2nd layer)
- 10 oz reduced fat cream cheese
- 1/2 tsp vanilla extract
- 2 TBSP Pyure
- 1/2 cup heavy cream
Instructions
1. Combine the first 3 ingredients in a KitchenAid mixer and mix on high for 6-7 minutes or until the cream cheese is perfectly smooth.
2. Add the heavy cream and mix on high until light and fluffy.
3. Carefully spread over the crust.
4. Put pan in refrigerator to set while making the next layer.
Chocolate Cream Layer Ingredients (3rd layer)
- 2 cups heavy cream
- 7 TBSP cocoa powder
- 2 TBSP Pyure
- 1/2 tsp vanilla extract
Instructions
1. Combine all ingredients in a KitchenAid mixer, slowly start turning the speed up (otherwise your kitchen will be covered in cocoa). Whip until stiff peaks form.
2. Carefully spread the chocolate cream over the cream cheese layer.
3. Return the pan to the refrigerator to set while preparing the final layer.
Whipped Cream Layer Ingredients (4th layer)
- 1 1/2 cups heavy cream
- 1/2 tsp vanilla extract
- 2 tsp Pyure
Instructions
1. Combine all ingredients in a KitchenAid mixer. Whip until stiff peaks form.
2. Carefully spread the chocolate cream over the chocolate layer.
To finish the Royal Delight shave a chocolate bar all other the whipped cream layer. Refrigerate for at least an hour or two before serving to give the layers a chance to set completely. Sometimes I also dust the top layer with cocoa powder to give it a deeper chocolate taste and look.

Ingredients

Could I sub equal amounts of pecan meal and baking blend for the almonds? I really don’t like almond flour- but this looks delish!! I’m thinking of adding some peppermint extract to the choc for Christmas……

Can I substitute gentle sweet for the pyure sweetener listed in the recipe? If so, how much would be appropriate in each layer?

I noticed the crust calls for “baking blend.” What exactly is baking blend and where might I find it?

In 2 places when referring to the 4th (whipped cream) layer it says: Carefully spread the chocolate cream over the chocolate layer. Am I right in assuming you meant to say spread the whipped cream layer over the chocolate layer?

Pecan meal?? Crushed pecans….? Never heard that term so want to verify.
Pecan meal is ground pecans. You can also use all almond flour but pecans do bring a great flavor to the crust.
