Raspberry Pretzel Mousse

Ingredients for Crust

Instructions for Crust

1. In a small saucepan melt 1/2 stick of butter and sweetener. Mix until dissolved.

2. Add 9 crushed splitz pretzels. Mix. Transfer the pretzel mixture to a round Pyrex dish. Gently press down.

3. Bake for 10 minutes at 350. Let it cool a few minutes. 

Ingredients for Mousse

Ingredients for Mousse

  • 1/2 cup almond milk
  • 1.5 packets Knox gelatin
  • 1 cup heavy cream
  • 1/3 cup pyure (or 4 tbsp xylitol + 3 doonks stevia)
  • 8oz sour cream
  • 1 cup of frozen raspberries 

Instructions for Mousse

4. In a small saucepan, on medium heat, add almond milk, sweetener and gelatin. Whisk and heat until it begins to steam. Remove from heat. 

5. In a kitchen aid mixer whip 1 cup of heavy cream until stiff peaks form. Add 8oz of sour cream and whip until smooth. With the mixer on, slowly add the steamed almond milk. The cream mixture will be runny. Adjust sweetness to your liking.

6. Very gently with a spatula mix in the raspberries. 

7. Pour over the cooled baked pretzels. Refrigerate until firm (couple hours).
