Summer Strawberry Soup is what summer is all about – well, that’s if you’re Ukrainian. I’m not sure if many of my American friends ever heard of it, let alone tried it. We eat it from a bowl and with a spoon. I’ve made strawberry soup hundreds of times, I’ve had it at family and friend’s gatherings – but NO ONE and I mean NO ONE has EVER come close to making as delicious as my grandma made it growing up. She never measured anything, actually my grandma is probably the worst person to get recipes from (when she was still running the kitchen….ohh! she made the BEST perogies). ‘Grandma, how do you make this?’ She would respond with ‘a little bit of this, some of this and that, than taste and adjust the first 5 things you added.’ Thanks grandma but that is not how I operate – but that was her way of sharing recipes. I finally get it, I think, when I make either green or red borscht – it’s really hard to give the exact measurements of ingredients.

But back to the summer strawberry soup – it’s so delicious and full of flavor and the best part is….it’s a ‘one pot’ treat. You don’t have to get 10 bowls dirty, it’s all done in your blender. I have a Vitamix and it’s a real beast in the kitchen, it will pretty much blend anything. I received it as a Mother’s Day gift 4 years ago when I first started Trim Healthy Mama and it’s as amazing as it was that first week – definitely worth the investment. We ended up purchasing it refurbished, I was able to get a fancier model at a lower price.

Ingredients

  • 2 pounds strawberries, washed
  • 3 tbsp pyure
  • 2/3 cup heavy cream

Instructions

1. Add strawberries, pyure and heavy cream to a blender and turn on high for 30-45 seconds. I don’t cut the stems off but depending on your blender you might have to so you don’t see the green leaves.

2. Pour in a bowl and enjoy! Refrigerate leftovers.

Growing up we used to eat it with bread. Oh goodness – it was so good.

If you want to make it with real sugar you absolutely can, just replace the pyure with about 1/2 cup sugar.

  1. I think I’ll half the recipe and try it today for a snack maybe I’ll add some strawberry whey protein from thm for protein. I’ll let you know how it goes
