Easy Biscuit Donuts

Even though I’m 100% Ukrainian there are certain dishes I have not perfected yet and ponchiki is one of them. Ponchini is a delicious pastry that’s filled with jam or poppy seeds, the dough is yeast based – it’s basically a heavenly treat but you really need to perfect the skill of knowing exactly how the dough should feel for it to be a success. Unfortunately, I have NOT perfected that skill. Last time made ponchiki they were so hard and dense even my mom in law (who was the easiest going person when it came to food) couldn’t eat them – they were plain terrible. About 12 years ago the idea popped into my head to use store bought biscuits (the ones that give you a heart attack when you pop them open) and you know what – they worked great. The dough was flaky and beautiful, very close to the real thing. Then when I had kids I started using the jumbo biscuits to make donuts. The kids loved them, it was easy and quick and it’s super inexpensive to make them. Depending on how many donuts you’re making you will need 1-2 jumbo canned biscuits.

Ingredients

  • 1-2 jumbo biscuit can
  • Oil for frying (I use refined coconut)

Instructions

1. Use a heavy bottom large sauce pan, heat oil until it reached 360 degrees, keep an eye on the temp. You want about 1.5 inches of oil in your pan.

2. Take your biscuits apart and use a small round cookie cutter to punch hole in each biscuit.

3. Carefully place 3 donuts in the hot oil and cook them on each side for no more than a minute. Do the same with the donut holes.

4. Take the donuts out of the oil and drain them on a paper towel.

Ingredients for the Glaze

  • 1/2 cup powdered sugar
  • 1.5 tbsp milk
  • tiny splash of vanilla extract
  • tiny splash of lemon extract
  • single chocolate bar (TJ) or other sweeter chocolate
  • 2 tbsp half & half
  • powdered sugar

1. In a bowl combine powdered sugar, extracts and milk. Whisk until fully combined. The frosting needs to be a little on the runny side.

2. In a microwave safe bowl melt the chocolate in 30 second incriminates, mine took 1.5 minutes. Mix until chocolate is fully melted. Add half & half and mix until smooth.

3. Dip donuts in the frosting and place on a drying rack to dry – just a few minutes. Or if you choose you can dust them with powdered sugar, my kids love the Glazed and powdered sugar ones best.
