Trim Healthy Mama S / Keto / Low Carb
This salad is a staple is most Ukrainian homes but especially during warm summer months. Ukrainians are big on gardening, therefore, cucumbers and tomatoes are always available in abundance. There are so many different variations to this salad and so many add-ons but I like it super simple the way my babysya (grandma) used to make it.
Here are some things you can change / add on
- add crushed garlic
- add finely chopped cauliflower
- add thinly sliced radishes
- add dill or parsley
- use red or green onion
- use mayonnaise instead of sour cream
- use oil & vinegar instead of sour cream
Ingredients
- 4 cups tomatoes, diced
- 2 1/4 cups cucumbers, thinly sliced
- 1/3 cup onion, thinly sliced
- 1/2 cup sour cream
- 3/4 tsp salt
- 1/4 tsp pepper
Instructions
1. In a large bowl combine all ingredients and gently mix.
2. Adjust salt and pepper to your liking.

Cucumber Tomato Salad
Ingredients
- 4 cups tomatoes, diced
- 2 1/4 cup cucumbers, thinly sliced
- 1/3 cup onion, thinly sliced
- 1/2 cup sour cream
- 3/4 tsp salt
- 1/4 tsp pepper
Instructions
- In a large bowl combine all ingredients and gently mix.
- Adjust salt and pepper to your liking.
