Trim Healthy Mama S / Low Carb / Sugar Free
You asked….and here it is – the long awaited recipe. I am not a peanut butter lover, it’s okay but not something I would gravitate to normally but, you guys, I CANNOT stop eating these. I made two batches this week, one into little cups and another into balls. I did give a few away but I ate MOST of them – these little balls of goodness are phenomenal. I keep all my low carb desserts in the refrigerator and do the same with these. So let’s get to it….
Ingredients for the Peanut Butter Balls
- 1/2 cup + 1tbsp of peanut flour
- 1/2 cup chunky peanut butter
- 3 tbsp pyure
- 1 tsp of vanilla
- 2 tbsp melted coconut oil
- 1 tbsp coconut flour
- 1/4 cup + 3 tbsp of 85% chocolate chips
1. Place all the ingredients to a medium size bowl and mix really well. Microwave for 1 minute for the mixture to get a bit more softer and mix again.
2.Divide into 17 balls (1 tbsp each, I measured). Roll into balls. Place freezer for 10 minutes.
3. Melt 1/4 cup + 3 tbsp of chocolate chips in microwave.
4. Stick a toothpick on the bottom of the ball, dip in chocolate and use a fork to put it back on the wax paper.
5. Place in freezer for 3 minutes for the chocolate to harden.F
For optimal results keep refrigerated in an airtight container.

Luda, I made them. They’re great! Word of caution: if one doesn’t look as pretty after you coat them in chocolate, don’t pick it up off the parchment quickly! Otherwise all of them go rolling! Oh man! Now, they all look like the not-pretty one. Haha! But still, so yummy! Thank you! ❤️

I love these frozen! They’re a perfect way to curb my sweet tooth cravings, without feeling guilty about eating sugar.
That’s such a great idea, I never would have thought of that. I normally just eat them ALL within a few days.
Is there a away to make these into bars in a pan? I am not a fan or “Bites/Balls recipes” They tend to be time consuming and messy:) Thank you!
