Veggie Dip Salad

With warmer weather here this salad is perfect for your family cookouts. It’s full of flavor, crunch and everything a summer salad should be. I love my garlic and this salad shows it, feel free to only use one clove if you do not what it to come through too much in the dressing. I really hope you like this salad as much as we do.

Ingredients for Salad

  • 2 cups cauliflower, finely chopped
  • 2 cups broccoli, finely chopped
  • 2 colored peppers, thinly sliced (about 2 cups)
  • 5 pieces bacon, chopped

Instructions

1. Prepare your veggies and bacon. Finely chop cauliflower and broccoli. Clean the peppers and slice them into 1 inch strips then thinly slice each strip. Chop bacon coarsely, not fine.

2. Add all ingredients to a bowl.

Prepare the dressing.

Ingredients for Dressing

  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tbsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 garlic cloves, crushed

Instructions

1. In a bowl combine all ingredients and mix well.

2. Pour the dressing over the veggies and bacon and mix well. I like to plate my veggies and bacon and keep the dressing on the side until I’m ready to serve.

  1. This looks so good! Have you tried it with only mayo? I can’t have dairy, so I might do that.
