Egg Salad

This salad was born out of boredom of eating eggs by themselves. I LOVE pickles. Not just “like” to have a pickle as a side but LOVE pickles with everything. Have you tried pickle flavored chips?! Oh my!!! Pure deliciousness, not healthy but delicious! I loooove pickle juice too – it’s so good. My boys inherited their love of pickles from me.

I’m not denying that this is a strange combination of ingredients but it’s a combination you MUST try, at least once. I normally eat the salad by itself but my friend Megan eats it with spicy pork rinds and this gave me an idea to have it with a lite rye wasa cracker – and it was awesome, my new favorite. Thank you Megan.

Ingredients

  • 2 hard boiled eggs
  • 2 hard boiled egg whites
  • 2 large pickles
  • 2 tbsp mayonnaise
  • 2 tsp yellow mustard
  • 1 tbsp nutritional yeast
  • 1/8 tsp salt
  • 1/8 tsp pepper

Instructions

1. Diced eggs, egg whites and pickles and add them to a medium size bowl (sometimes I dice the pickles first and put them in a colander for a few minutes for the extra juice to drip off).

2. Add the rest of the ingredients to the bowl.

3. Mix well. I normally eat the salad right away. It’s not a salad that gets better with time.
