Turn your smoker on to 275 and add a handful of wood chips to the wood chip chamber.
Line a large tray with plastic wrap for easy clean up later. Remove skin from the chicken using kitchen shears. Season the chicken on all sides.
Place the chicken drumsticks into the smoker, make sure they are not touching.
After 30 minutes lower the temperature to 230 and add another handful of wood chips. Add wood chips 2 more times in 45 minute increments. The chicken will be done around the 2 hour mark or when the internal temperature reads 165 degrees.
