If you are looking for a delicious low carb chocolate chip cookie recipe look no further. These cookies are ahhh-mazing and my family agrees! There are a few things that make this recipe stand out, please do not skip any steps. If you prepare your ingredients ahead of time the process will go very quickly.
Steps not to skip
- beating eggs whites into stiff peaks
- whipping butter and brown sugar until very light and fluffy
- at the 5 minute mark drop the pan to flatten cookies
- do not bake longer than 11 minutes (unless your oven is unusually slow)
- leave in oven for addition 2 minutes after releasing heat
Ingredients
- 1 tsp baking soda
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 3 egg whites, room temperature
- 5 tbsp butter, room temperature
- 1/3 cup low carb brown sugar, lightly packed
- 1 3/4 cup almond flour, fluffed before measuring
- 2 tsp baking powder
- 1/2 tsp xanthan gum
- pinch of salt
- 3/4 cup chocolate chips, 85% or higher
Instructions
1. In a small bowl combine baking soda and ACV, mix until it stops fizzing. Set a side.
2. In a bowl combine almond flour, baking powder, salt and xanthan gum. Mix and set a side.
3. Beat egg whites until stiff peaks form. This step is very important. Set a side.
4. Whip butter and brown sugar until light and fluffy, this will take around 5 minutes on high speed.
5. To the sugary butter add vanilla extract, vinegar mixture and the dry ingredients. Mix until well combines. Add egg whites, mix until no white streaks remain. The dough will be very light and sticky.
6. Using a spatula stir in 3/4 cup of chocolate chips.
7. Using a measuring tablespoon, spoon out 24 cookies unto a parchment lined cookie sheet. Bake at 350 for 10 minutes, 11 at most. At the 5 minute mark take out the pan and drop it on your counter one time. Return pan to oven.
8. Once baked open the oven door for a 1-2 minutes to release the heat. Close the door and leave the cookies in for another 2 minutes.

Just wondering…are you supposed to fold in the egg whites or mix them in with the mixer? I did the latter, and the cookies seemed pretty flat.
Which measurement is baking soda and which ACV? It says 1tsp baking soda, then 1Tbsp baking soda…? 🙂
I’m not sure why it transferred like that but it’s supposed to be 1 tsp baking soda and 1 tbsp apple cider vinegar. I fixed it. Thank you.
Thank you, one more question: do you turn off the oven when you release the heat, so it’s sitting 2 minutes in there still-hot, but not on?
