This is the easiest brownie recipe you will ever make and you don’t even have to use a mixer. I was debating calling them ‘easy keto brownies’ because they are really that easy to make. These brownies are thick, crunchy and super chocolatey – basically everything a brownie should be!
When I initially made this recipe I baked the brownies for 35 minutes and when they were fresh out of the oven they were perfect. The next day I felt as though they were a bit too dry but after zapping them in the microwave for 15 seconds they tasted exactly as they did when freshly baked.
Because the chocolate chips do not fully melt – with every bite you get a burst of chocolate and a nice crunch from the walnuts. Ohhh, they are so good!
The secret ingredient in this recipe is the black cocoa powered. When I first purchased it I was super nervous to use, unsweetened cocoa powder, in general, has a bitter taste to it. I, for sure, thought that black cocoa powered would be even more bitter but I was pleasantly surprised how great it tastes. Now, when recipes call for cocoa powder I use black cocoa powder, it truly brings the dessert up a notch.
Ingredients for Brownies
- 1 stick of butter
- 1/4 cup Low Carb brown sugar, packed
- 1/2 cup chopped chocolate, 85%
- 2 tbsp black cocoa powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 eggs
- 1 1/2 cup almond flour
- 1/2 cup chocolate chips (stevia sweetened)
- 1/2 cup walnuts, chopped
Instructions
1. Preheat oven to 350 and line a 8×8 pan with parchment paper, set a side.
2. In a medium sauce pan add the first 6 ingredients (butter, brown sugar, chopped chocolate, cocoa powder, salt and vanilla extract) heat just until all ingredients are melted and smooth.
3. Remove from heat and allow mixture to cool 5 minutes. Add eggs, one at a time, whisk quickly until fully incorporated. Do the same with the almond flour.
4. Stir in chocolate chips and walnuts. Bake for 30 minutes.

These brownies are excellent! ! I have made them twice and they are the best THM brownie I have tasted!

I just bought the black cocoa powder so I’m excited to try this. My husband can’t have eggs do you know if I can use either applesauce or flax eggs in replacement of the two eggs?
Hi Karen. I think flax seed would probably be a better option. How much I’m not sure, though.

Absolutely loved the consistency and rich chocolate taste. Only question, it was not sweet at all with the 1/4 cup of swerve brown sugar. I had to do a icing glaze over the top to add some sweetness. Is there another brand of sugar you use or is the 1/4 cup correct?
Hi Dabney. I’m so glad you liked them. I use my own low carb brown sugar and if you click on it it will take you to the recipe. For me they are almost a tad too sweet, but we all have different sweetness preferences. I am not sure how swerve brown sugar compares to mine sweetness wise.
Pyure is twice as sweet as Swerve (she uses Pyure in her homemade brown sugar) so you would need to double the swerve to get the same sweetness. I’m making these tonight! Sounds delicious!
These brownies are fabulous! Great texture! The best Keto brownies I have tasted!!
