Easy Pesto Pasta with Roasted Pine Nuts

If you are looking for a quick side for your meal look no further. This pesto pasta with roasted pine nuts (or seeds, as my kids call them) has become a favorite of ours.

Don’t let the simple ingredients fool you – the taste is phenomenal!

If you are not a fan of pine nuts or cannot find them at your local grocery store you can skip them with out affecting the end result but I do love the flavor and extra crunch they bring to this dish.

I like the pasta freshly made but I might like it a little more as leftovers, something about the pasta soaking up all that delicious sauce….yum! Here I enjoyed it with grilled veggies (recipe coming soon) and half pickled pickles.

You can add grilled chicken and lightly sauteed colored peppers to have a one-skillet meal that will please everyone in your family.

Ingredients

  • 1 box Dreamfields pasta (13.25oz)
  • 1 cup half & half
  • 1 cup heavy cream
  • 6 tbsp pesto
  • 1/2 tsp salt
  • 1/3 cup pine nuts (optional)
  • Parmesan cheese

Instructions

1. Cook pasta according to instructions on the box.

2. In a large skillet heat a drizzle of olive oil, add pine nuts. Constantly stir the pine nuts until they are roasted. DO NOT walk away from the skillet, they will burn easily. Set the nuts aside.

3. In the same skillet add heavy cream, half & half and pesto, bring mixture to a gentle boil. Season sauce with 1/2 tsp of salt. Turn the heat down just a bit.

4. Add cooked pasta and pine nuts, gently stir to coat noodles. Garnish with Parmesan cheese (as little or as much as you want) and serve immediately.

Below I enjoyed the pasta with grilled veggies, cucumber bites and smoked salmon.
