Low Carb BLT Salad

What can be better than a good ol’ salad? Maybe salad with lots of bacon?! When I develop a recipe it’s hard to know if it’s a really good recipe (or is it just good to me) and I always what will others think? When I originally developed this particular recipe I brought it to a family get-together in order to receive some feedback. Before I could ask around what everyone thought of the salad – it was GONE. I will take that as a compliment. It really is good and very quick and simple to make.

This will not be a popular opinion but I do not like bacon cooked in the oven, I know it’s not normal but I just don’t. I prefer to either cook my bacon in the microwave (my preferred method) or on the stove.

Microwave Method

Take a large dinner plate and lay down two paper towels, lay down bacon and cover with another paper towel. Cook it in the microwave for 1 minute longer than the number of bacon pieces you have on the plate. Depending on the strength of your microwave you might have to increase or decrease your time but my microwave runs on that ‘equation.’ Roughly chop the bacon.

Stove Top Method

Put your bacon in the freezer for 30 minutes before you are ready to cook it. Once it’s slightly frozen use kitchen sheers or a sharp knife to roughly cut the bacon (do not cut it into small pieces, otherwise, it will get lost in the salad). Use a heavy bottom pan to fry the bacon to your preferred doneness, Half way through the cooking processes drain the grease. I like my bacon crispy. Once the bacon is done use a slotted spoon to transfer the bacon to a plate with a paper towel.

I hope you love this salad as much as we do. I often double the recipe to have extra dressing on hand. Depending on how much dressing you like on your salad you might have a little dressing left over.

If you are not a fan of Wasa crackers replace them with either roasted pumpkin seeds or sunflower seeds or you can skip the ‘crunch’ all together. You can also use keto/low carb bread to make croutons – that would be amazing addition to this salad.

Ingredients for Salad

  • 3-4 large hearts of romaine
  • 1 pound of bacon, cooked
  • 4 cups cherry tomatoes
  • 5 light rye Wasa crackers

Ingredients for the Dressing

  • 1/2 cup mayonnaise
  • 2/3 cup sour cream
  • 3 garlic cloves, crushed
  • 1/2 tsp pepper
  • 3/4 tsp salt
  • 2 tbsp parsley

Instructions for Salad

1. Chop the lettuce and bacon, cut tomatoes in half and break the Wasa crackers into crouton size pieces.

2. Prepare the dressing. Combine all ingredients in a bowl and mix well until combined. Refrigerate until ready to use.

3. Using a large plate/bowl, plate the salad ingredients. Dress the salad right before serving.
