Chop bacon and cook until crispy (about an hour before I throw the bacon in the freezer, it's easier to chop it). Drain fat and set aside. Reserve the fat.
Saute onion and pepper. Set aside.
Cook sausage, drain and discard fat.
Grease pan with coconut oil (spray), add bread and drizzle with reserved bacon grease. Top with cheese.
In a large bowl whisk eggs, milk and sour cream. Add pepper/onion mixture and sausage. Add a little salt and pepper.
Pour mixture over the bread/cheese. Top with bacon. Cover with foil.
Bake 45 minutes. Remove foil and bake an additional 15 minutes.
